Traditionally topped with powdered sugar and fresh fruit, we’re adding a Southern twist with homemade strawberry jam that swirls beautifully into the batter.
Ingredients:
4 tablespoon butter
5-6 dollops of strawberry jam (measure with your heart)
1 cup all-purpose flour
1 cup whole milk
6 large eggs
1 tablespoon vanilla extract
zest from 1 lemon
Pinch of salt
Instructions:
1. Preheat Your Oven & Heat the Skillet
Start by preheating your oven to 450°F (230°C).
2. Mix the Batter
While the butter is melting, whisk together the flour & eggs first. This keeps your batter from getting clumpy. Next mix in milk, vanilla, and a pinch of salt in a medium-sized bowl. The goal is a smooth batter that’s slightly runny, perfect for puffing up in the hot skillet.
3. Melt the Butter
Once the oven is fully preheated. Add 4 tablespoons of butter to your 9 in cast iron. Place cast iron in the oven to melt butter and get cast iron hot. Keep an eye on your butter so it doesn't burn.
4. Dollop the Strawberry Jam
Once the butter has melted and the skillet is sizzling, carefully dollop spoonfuls of strawberry jam on top of the butter.
5. Swirl the Jam
Using the top end of a wooden spoon, gently swirl the strawberry jam through the butter. This creates beautiful pockets of jam throughout the batter.
6. Pour the Batter
Pour the prepared batter into the cast iron over the jam and melted butter.
